PROBLEM TO BE SOLVED: To provide a method for producing a green vegetable prevented from discoloration during preservation. ;SOLUTION: A green vegetable is subjected to a blanching treatment with an alkaline solution and it is immersed in a cyclodextrin solution to provide the objective discoloration-prevented green vegetable. In the blanching treatment, the use of a boiling alkaline solution is preferable because the preventive effect to the discoloration of the green vegetable is more heightened.;COPYRIGHT: (C)2000,JPO
