PROBLEM TO BE SOLVED: To provide a method for maintaining the freshness of mushroom bagged for sale so as not to accelerate its quality deterioration. ;SOLUTION: This method comprises the following procedure: when mushroom is to be bagged, fine powder of a freshness-maintaining material is made to adhere at 0.3-0.7 wt.% to the cut surface of its root; wherein the freshness- maintaining material to be used is prepared by heat treatment of zeolite and coral at 800°C and 300°C, respectively, to convert them to ceramics followed by pulverizing them and then mixing in the weight ratio of (1:1).;COPYRIGHT: (C)1999,JPO
