Preparation of a fat-free and dietetic mushroom from fresh cultivated mushrooms (I) for vegetarians, comprises cleaning and polishing the fresh mushrooms, cutting the mushrooms into disk-shaped pieces, heating the mushrooms with water in a boiler at 80-85[deg]C and cooling at 30[deg]C for 5-8 hours, where the cooling takes place under temporary agitation, and adding spices, preservatives, sweeteners, vinegar liquor, food salt etc., and after the cooling, the mushroom preparation is filled with flavors and a liquid gelatin and filling a portion of mushroom aspic into a container.
