Extraction process with supercritical fluids for the production of natural antioxidants and antioxidant obtained through said process. The process includes, in a first phase, an enzymatic treatment of the leaves of the aromatic plant that is the object of extraction and a dragging operation with steam in order to eliminate a part of the essential oil, then proceeding to obtain a crude extract by solid-liquid extraction using organic solvents, and finally proceeding to a purification phase of the extract with removal of the residual essential oil by extraction with CO sub, 2 under supercritical conditions.
