PURPOSE: A production method of modified starch is provided by using dextransucrase from the mutant strain. Thereby, an enzyme is produced without synthesis of polysaccharides and purified easily. CONSTITUTION: A production method comprises steps of: modifying starch by using the dextransucrase obtained from the leuconostoc mesenteroide B-742CB, the B-1299Cb or the B-1355C; examining a resistance against the hydrolase of the modified starch; iodine-dyeing the modified starch; examining the solubility thereof; and analyzing the methyl ration. The dextransucrase is separated after a membrane filtration.
