A complex orthohydroxymandelate sodium - phenol - water crystallized, its preparation process in which it is introduced the phenol (p2) in an aqueous solution at a ph between 7 and 9,5 in order to obtain the expected product which was crystallized, the aqueous solution s being such that after the reaction of (p1) phenol with glyoxylic acid in the presence of a tertiary amine and of a trivalent cation, and then treatment with the aid of a solution of an alkali metal hydroxide, application of this complex to the preparation of sodium orthohydroxymandelate (naohm), a process for the preparation of the latter from the starting complex.
