Foodstuff additives based on dewatered comminuted sugar-rich roots, especially sugar beet. Food grade additives consisting essentially of a product obtained by comminution of sugar-rich roots, particularly sugar beet, into particles having a virtually uniform composition and having a dry solids content of at least 90 %, the dry solids being comprised of (by wt.) saccharose (65-80 %), vegetable fibers (10-25 %), fatty acids (0.5-1.5 %), vegetable proteins (3-6 %) and mineral salts (1-3 %). At least 20 wt. % (preferably at least 30 wt. % and particularly at least 40 wt.%) of the saccharose present is in masked form and virtually non-extractable with Pb acetate solution.
