The process involves vacuum packing the oysters in a suitable film (6,7,8) to ensure that the shells remain closed. This is achieved by flat packing the oysters in a film envelope, withdrawing the air, using for example a vacuum pump, and sealing the oysters within the bag. An Independent claim is included for the state of the oysters caused by the packaging and by the method.
