Fruit is preserved by dehydration and then frying. An Independent claim is included for the apparatus for perfuming the above process. Preferred Features: The fruit may be dehydrated by warm air at 170 deg C, coated in fat and sugar that caramelises when fried and finally deep frozen. The frying is performed in double walled hemispherical vessels with a grill top.
