PROBLEM TO BE SOLVED: To produce a starch having high whiteness by separating mung beans to a fruit part and a coat part, and using only the fruit part.;SOLUTION: Washed and soaked mung beans of raw materials are subjected to a collapsing roller to separate the mung beans into a fruit part and a coat part, and only the resultant fruit part is ground to provide a ground powder.
