PROBLEM TO BE SOLVED: To provide a corn steep-containing composition readily dispersible in water and suitable for fermentation. SOLUTION: (1) An active wheat gluten-based nitrogen-containing composition containing powdered corn steep in an amount of 20-80 wt.%, preferably 25-75 wt.% based on an active wheat gluten. The contents of free proline, alanine and leucine are in the ranges of 200-1,000 mg, 500-1,500 mg and 400-1,200 mg, respectively based on 100 g of the dry composition, the lactic acid level is =3 wt.% based on the dry composition, and the total phosphorus level is =1 wt.%. (2) A method for preparing the nitrogen-containing composition able to obtain a composition dispersible in an aqueous solvent. (3) The composition capable of being used as a substrate for producing antibiotics, an ingredient for animal feed composition, or a food or a food additive for human.
