PROBLEM TO BE SOLVED: To improve a working speed, a production yield and upgrading by mechanizing operation for alternately forming leveled cuts in a meat block from right and left sides in order to obtain meat having a shape of a strip of paper from a kalbi meat-on-the-bone block. ;SOLUTION: Two sets of cutter assemblies placed in a leveled state along both sides of a workpiece and each having a plurality of blades are installed along both sides of a belt conveyor in such a way that the cutter assemblies are shifted back and forth to each other along the direction of conveyance and are used in a combined state with a guide plate where its width can be adjusted and is continuously variable to improve machining accuracy.
