The invention refers to the agriculture, namely to fruit-growing and may be used for determination of fruit harvesting optimal term. The method according to the invention comprises selection of fruit average samples, determination of the lipids peroxidic oxidation in the cuticle according to the malonic dialdehyde concentration level of the antioxidant activity according to the oxidized lipids percentage and calculation of the lipids autoxidation index according to the relation between the malonic dialdehyde concentration (?mol/g) and percentage of the oxidized lipids, the fruits being harvested when the value of this index is less or equal to 12,0 conventional units.The proposed method allows to determine the predominance moment of the lipids antioxidant activity over the peroxidic lipids oxidation in the fruit cuticle.Claims: 1
