Animal feed with improved digestibility comprising a cereal fermented with lactic acid bacteria

An animal feed comprising one or more fermented cereals selected from the group consisting of wheat, oats, rye and barley, is prepared by fermenting a cereal with a lactic acid bacteria at a temperature of 25 to 35°C for 10 to 48 hours; admixing the fermented cereal with at least one animal feedstuff; and optionally processing the admixture by expansion, compression, extrusion and/or drying. The feed has improved quality, improved resistance to undesirable bacterial strains and improved digestibility. The feed is preferably for fish (e.g. salmon) or birds (e.g. chicken).
