The invention is related to a process for producing cyclodextrin by cyclodextrin glucanotransferase (EC 2.4.1.19.), extracellularly produced by a novel alkalophilic bacterium iBacillus circulans/i B-65. Cyclodextrin glucanotransferase from iB. circulans/i B-65 is characterized by high degree of conversion of starch to cyclodextrins and it is specific for beta -cyclodextrin formation.
