PURPOSE: Germinated cereal foods containing an increased amount of GABA(gamma-aminobutyric acid) and a producing method thereof using chitosan are provided. Therefore, the contamination can be decreased while germinating cereals and the GABA content in cereals can be increased. CONSTITUTION: The method for producing the germinated cereal foods containing an increased amount of GABA (gamma-aminobutyric acid) comprises the steps of: washing unpolished rices, barleys, wheats, corns, African millet and beans with water; dipping them in chitosan-containing lactic acid solution which contains 3 to 5% of lactic acid and 100ppm of chitosan; germinating the cereals in chitosan-containing lactic acid solution for 2 to 4 days. The amount of GABA is 7.6 times as higher as that of unpolished rices before being germinated.
