FIELD: alcoholic beverage industry. SUBSTANCE: for preparing 1000 dal of liqueur with strength of 20 vol.% the following ingredients are used: prune, 196.0-212.0 kg; brandy, 480-510 l; sugar, 530.0-560.0 kg; citric acid, 11.0-13.0 kg; aqueous-alcoholic liquid, the balance. For preparation of beverage, infusing process is carried out by cycles repeated for 6 days. During every-day cycle, at first pulsated extraction is conducted for 4.5-5 h by alternating impulses of compressed air with frequency of 0.165-0.075 Hz, then layer of solid phase is loosened during 1.5-3 min, and simple infusion is continued.
