Baking apparatus for pastries such as crullers (fried cakes) or doughnuts has a baking trough (10) with the products being transported through the hot fat between the inlet and outlet between driven rods or plates, there also being a turning device (12) above the trough and having a vertically movable lattice (13) which can be moved into the trough and swivelled on a horizontal axis (14) to turn the pastry on an edge (19) of lattice (13).
