PROBLEM TO BE SOLVED: To provide a method for producing a processed scallop adductor muscle having excellent taste and flavor and good to eat while preventing the loss of scallop extract by relatively quickly drying an unheated scallop adductor muscle (raw or frozen raw scallop) to solve the problems of conventional methods comprising a long time necessary for drying a heated scallop adductor muscle, extremely low drying speed of unheated scallop adductor muscle to frequently cause the degradation of the muscle and the dripping of the extract component of scallop adductor muscle in the case of heating the muscle in saline water, or the like. SOLUTION: The processed scallop adductor muscle having excellent taste and flavor and good to eat can be produced by slicing an unheated scallop adductor muscle (raw or frozen raw scallop), drying the sliced scallop and pressing with a hot plate heated to 100-250 deg.C.
