Plants are transformed with mutant polynucleotide molecules that encode maize endosperm ADP glucose pyrophosphorylase (AGP) and soluble starch synthase (SSS) enzyme activities. These enzymes have increased heat stability that when plants are transformed with the mutant polynucleotides exhibit an increase in heat resistance, and also have an increase in starch production, thus, resulting in an increased yield in plants grown under conditions of heat stress.
