The liquid examination appts. includes a measuring volume (8) comprising a passage (15) through which the liquid flows. A source of monochromatic light (31) sends a beam (F1) from an optical system (6, 32, 34) which includes an diffracting element (32) carrying a grating (38). This is chosen to match the characteristics of the source and the geometrical and spectral properties required for the illumination of the liquid passage (15) in order to induce fluorescence in at least part of the liquid. Three optical systems (19,20; 34-36; 40) are provided to collect the transmitted beam, the fluorescence, and the diffracted beam and provide signals representative of the content of these three beams to analysis unit (24).
