Enzymatic acylation of maltose hydroxyl comprising reaction of substrates with vinyl ester of a fatty acid in a mixture of organic solvents in the presence of a lipase. This simplifies selective acylation of a primary maltose hydroxyl in the position 6- of the non-reduction extremity. The process is also applicable to oligosaccharides derived from maltose and their alkylglycosides.
