PURPOSE: Provided are a novel yeast strain Saccharomyces cerevisiae SC-55(KFCC-11224), its isolation method and me fermentation liquor using the novel strain, thereby shortening fermentation time, cutting fermentation cost and maintaining high viability of he yeast. CONSTITUTION: The isolation method of Saccharomyces cerevisiae SC-55(KFCC-11224) comprises the steps of: preculturing a mother strain, Saccharomyces cerevisiae DSCC-1114 then treating it with EMS(Ethyl Methane Sulfonate); extracting a japanese apricot with alcohol; culturing the above treated strain in the alcohol extract; culturing the cultured strain in a yeast selection medium; extracting a japanese apricot with saccharide then diluting the extract; culturing selected strains in the diluted extract; then selecting a strain having higher fermentability than the mother strain.
