PURPOSE: A fodder for improving the meat texture of a freshwater fish and a preparation process thereof are provided, thereby improving the meat texture of a freshwater fish and removing a fishy smell from the freshwater fish. CONSTITUTION: A process for preparing a fodder for improving the meat texture of a freshwater fish comprises the steps of: (i) mixing squid bone powder, Cnidium rhizome powder and 0.01 wt.% of carotenoid containing Perilla japonica powder in a ratio of 3 to 5: 1 to 2: 1 to 2(w/w); (ii) adding 1 kg of Eucommia ulmoides OLIV. leaves into 3 to 5 liter of a 2% organic mineral containing solution, heating the mixture thereof at 60 to 100 deg. C, and filtering, extracting and concentrating the mixture to prepare an extract of Eucommia ulmoides OLIV.; and (iii) adsorbing 20 to 50 wt.% of the Eucommia ulmoides OLIV. extract to the mixed powder of the step (i), drying and pulverizing the mixture thereof, and adding the prepared product to a conventional fodder for a freshwater fish.
