The laboratory is assembled from two or more parallelepiped modules (2, 3, 4, 5), each with four walls, a ceiling and floor of composition materials, and inner partitions forming a receiving zone (10) for products to be analysed, at least one microbiologically secure working post, a washing zone (20) with a refrigerator (22) and autoclave (23), changing areas (24, 25), an airlock for waste, and optionally a non-clean room and office. The modular assembly is equipped with a central air conditioning unit, a differential pressurisation system for the zones, and heat regulating and ventilation systems.
