PROBLEM TO BE SOLVED: To provide a method for producing a processed food having a low water content and high calorie, excellent in nutrition balance and capable of being used as an emergency-helping food such as an emergency food stored as a provision for emergency such as a calamity, meeting with a disaster, etc., an emergency-helping food for refugees caused by an unstable political situation or a disaster area, a food for rescue party, or the like. SOLUTION: This method for producing a processed food having the low water content and high calorie and excellent in nutrition balance, is characterized by spreading a raw material dough obtained by mixing and kneading a raw material containing cereals with water on a curved plate-like metal net for forming its shape as a curved plate shape, heating for baking from below of the above metal net and evaporating and volatilizing the water content in the above raw material dough.
