PROBLEM TO BE SOLVED: To provide a method for discrimination by which the freshness of a royal jelly is elucidated.;SOLUTION: The planning of this method for discriminating the freshness of the royal jelly to be a basis for the degree of effectiveness for each lot or the reference of deterioration of the royal jelly itself is desired for the royal jelly formulated in a health food, etc. Thereby, the method for discriminating the freshness of the royal jelly is characterized in that the royal jelly is fresh when the amount of a protease or protease activity or both are 3 μU/mg based on the total amount of proteins by using the amount of the protease or the protease activity or both present in the royal jelly as an index to the freshness.;COPYRIGHT: (C)2003,JPO
