The present invention relates to a complete self-containing multipurpose dairy processor unit (10) for producing dairy articles comprising: a through-flow generator (14) for generating hot-water or steam, a heat exchanger (18) immersible in the liquid to be treated and being selectively fed when immersed in the liquid to be treated with hot water, steam from the generator (14) or cold water, whereby the heat exchanger (18) is provided with means for generating a forced flow within the liquid to be treated to cause the liquid to pass through said heat exchanger (14). Said forced flow generating means comprises a variable-speed turbine operable at different speeds and arranged to force the liquid from a location below said heat exchanger (18) upward into and through said heat exchanger, whereby said turbine can be connected to a stirrer or a curd cutting device.
