A smoke flavoring is added during normal cheese preparation, the young cheese is ripened so that it forms a crust and the cheese is then cold smoked. A method for making semi-hard or hard smoked cheese comprises adding a smoke flavoring during normal cheese preparation, ripening the young cheese so that it forms a crust and then cold smoking the cheese. An Independent claim is also included for smoked cheese made using this method.
