The enzyme with peroxidase activity isolated from artichoke (Cynara scolymus L.) is a glycosylated protein obtainable by a process comprising the extraction of said enzyme with peroxidase activity from artichoke tissues, separating said enzyme other enzymes with oxidase activity may be present in the plant material, and, optionally, partial purification or homogeneity of said enzyme with peroxidase activity. This enzyme can be used in the oxidation of reducing substrates such as clinical diagnostic reagent or as marker enzyme in immunoassays, for the manufacture of biosensors, as a biocatalyst for the production of products of biotechnological and industrial and environmental applications.
