PURPOSE: A formulation containing starch and a grape seed extract as an active ingredient is provided. Therefore, the formulation has an enhancing effect on the freshness of fresh ginseng without directly affecting its component. CONSTITUTION: A formulation for enhancing the freshness of fresh ginseng comprises: (A)starch having a melting point of 160 to 180deg.C; and (B) (i)coconut husk powder, rice hulls or persimmon leaf powder and water, (ii)one or more natural substance extracts selected from the group consisting of grape seed, radish seed, coriander seed, Rubi Fructus, Scutellariae Radix, Platycodi Radix, Fructus Chebulae and Zingiberis Rhizoma or (iii)one or more substances selected from (i) and (ii). The formulation contains 0.1 to 5% by weight of a natural substance, based on the total weight of the formulation.
