PURPOSE: A method of preparing rice cake using dried mulberry leaves with elimination of the odor is provided. The rice cake has edible fiber, calcium and other minerals and is used as functional food for the patients of constipation, diabetes and high blood pressure as well as a diet food. CONSTITUTION: The preparation method comprises the steps of: obtaining dried powder of mulberry leaves; first-grinding water-dipped rice; making composition of rice cake by mixing the above dried powder of mulberry leaves with the ground rice, and second-grinding; first-moulding the above composition; and second-moulding the cooled molded rice cake of the previous process.
