SUBSTANCE: invention relates to microbiological synthesis and represents the novel strain of yeast used in production of pressed yeast for baking and alcoholic industry. The yeast strain Saccharomyces cerevisiae ZS used in production of pressed yeast is obtained in laboratory of The Closed joint-stock company "NP Voronezhsky drozhzhevoy zavod" by method of natural selection. Specific feature of this yeast strain are high enzymatic activity (maltase activity is 40 min and zymase activity is 36 min), high raising force is 40-42 min. Except for, the strain shows high resistance against inhibitors of molasses media, enhanced resistance against foreign microflora and good baking properties.
