Machine kneading procedure comprises: (1) putting the ingredients of the dough (P) into the kneading machine chamber (2); and (2) mixing them together during a kneading phase which includes a vacuum phase and at least one phase in which a gas (G) containing oxygen is introduced. Machine kneading procedure comprises: (1) putting the ingredients of the dough (P) into the kneading machine chamber (2); and (2) mixing them together during a kneading phase which includes a vacuum phase and at least one phase in which a gas (G) containing oxygen is introduced. The vacuum phase lasts more or less the whole of the kneading phase, and begins and ends, as does the gas introduction phase, shortly before or after the start and finish of the kneading phase. The gas can be introduced in several separate phases at variable time intervals and of variable duration, from a few seconds to several tens of minutes, and the flow of gas can be varied in each phase. During the vacuum phase the pressure inside the chamber is between 0.02 and 0.98 bars. The apparatus used for the procedure comprises a chamber (2) in a vessel (3) with a hermetically sealed cover (4) and a kneading rotor (6), a gas feed system (8, 9) and vacuum duct (12) and pump (13).
