The method includes a quantity of refrigerant of the same nature as that of the chosen temperature is injected into the exchanger ensuring the detachment of ice crystals fixed on the internal surface of the heat exchanger. The quantity of heat coming into play during the detachment operation of the crystal is less than the quantity of heat necessary to complete melt the crystal. The heat being stored in an insulated reservoir.
