PROBLEM TO BE SOLVED: To provide a method for producing hard and dry cut Japanese plum excellent in a restoration property, and having crisp palate feeling peculiar to Japanese plum before drying when admixed to boiled rice or when served as a soup by pouring boiled water thereon; and to provide hard and dry cut Japanese plum obtained by the method.;SOLUTION: The hard and dry cut Japanese plums are produced by the following process: cutting pitted hard Japanese plums, adding salt to the thus obtained hard and cut Japanese plums so as to have the salt content of 15-40 mass%, and adding at least one kind of a sugar alcohol selected from sorbitol, maltitol and reduced starch syrup so as to have the sugar alcohol content of 6-25 mass% followed by drying the resultant Japanese plums.;COPYRIGHT: (C)2004,JPO
