METHOD FOR MASS-PRODUCTION OF HALF-DONE EGG WITH SHELL

PROBLEM TO BE SOLVED: To provide a method for the continuous mass-production of half-done eggs with shells, having stable quality.;SOLUTION: This method for the mass-production of the half-done eggs with shells comprises the classification of raw eggs by the size to collect eggs having a size falling within a specific range, the control of the temperature of the classified raw eggs to a definite level, the heat-treatment of the eggs at a prescribed temperature and period and the quenching of the boiled eggs in cooling water. The method can solve the problems of conventional method comprising the formation of hard-boiled eggs by the rise of the heating temperature by several degrees or a slight elongation of the heating time and the necessity in the control of the temperature and the heating time of a heating tank corresponding to the raw eggs in the case of mass-production of half-done eggs.;COPYRIGHT: (C)2004,JPO
