PROBLEM TO BE SOLVED: To provide a food material for a steamed cake, etc., without producing air bubbles between an epidermis and an inner layer or making cracking occur on the surface by continuous steaming. SOLUTION: In the method for steaming the food material continuously under a high- temperature steamy atmosphere, low-temperature steaming is performed, which is adjusted in such a manner that a rise in the temperature of the atmosphere follows the temperature rise curve of a batch type steamer in the initial stage of the steaming. Air is pumped into the steam in order to adjust the temperature of the atmosphere. Medium-temperature steaming is performed between the low-temperature steaming and the high-temperature steaming. A device for steaming the food material continuously uses a tunnel type steamer or a high- temperature steaming chamber, desirably a vertical type steamer. The above device having a steam supplying means for supplying the steam for steaming the food material is provided with a high-temperature steaming section, a low-temperature steaming section, and a conveying means. The inside of the high-temperature steaming section is filled with the steam supplied from the steam supplying means. The low-temperature steaming section has a means for adjusting the rise in the temperature of the atmosphere in such a manner as to follow the temperature rise curve of the batch type steamer in the initial stage of the steaming. The food material is transferred through the low-temperature and high-temperature steaming sections for the purpose of being steamed by the conveying means.
