Continuous steaming method of brewing raw material and horizontal continuous steaming apparatus

PURPOSE:To provide the subject method capable of solving inconvenience of a conventional system twice steaming a brewing raw material such as hard rice without carrying out large remodeling and attaining good steaming-up result free from steaming unevenness by single steaming. CONSTITUTION:In steaming and boiling brewing a raw material immersed in water in a course carrying the brewing raw material, additional water is sprinkled from the upper region on unheated layer side toward the boundary face 14 between unheated layer produced in the brewing raw material being conveyed and a layer to be heated, and required water content is continuously permeated into the unheated layer and the layer to be heated in both side area of the boundary face and steam heating is continuously applied to the layer to be heated transferred while keeping permeated water content from the lower face on the layer to be heated to complete steaming and boiling of the brewing raw material. A sprinkling apparatus 15 for feeding water toward the boundary face from the upper region on the unheated layer side is provided in the horizontal continuous steaming and boiling apparatus.
