The present invention refers to a process for producing ice blocks having chemical additives allowed to be used by the food industry, such as citric acid, ascorbic acid and potassium sorbate, which are considered by the FDA as safe products (GRAS) in ice block production. Said ice is used for maintaining the stored fresh fish in direct contact with crushed ice at a temperature of -1 degree C. Depending on the fish freshness degree, the ice block production containing the abovementioned additives is applied as crushed ice over fresh viscera-less washed fish and stored at a -1 degree C temperature, thereby enabling the fresh fish to extend the shelf life thereof from 2 to 4 times as much as the shelf life of the same fish but being stored at the aforesaid temperature in crushed ice without additives.
