Method of manufacturing a collagen membrane from pig skin. Collagen membranes are formed from pig barks (ie pig skins) for use in a wide variety of applications and; more preferably, to sheath food products, such as hams and the like. According to the method of the invention, first, after removing the skins from the pig, the skins are quickly frozen. In a subsequent treatment, the crusts are thawed and then enzymatically degreased. Next, the crusts are subjected to rapid alkaline hydrolyzing. Next, the barks are subjected to acidic hydrolyzing. The crusts are then milled in the form of a geliform fluid mass. Finally, the fluid mass is extruded, laminated and dried until a collagen membrane is obtained. The collagen membrane obtained can be used, in preferred embodiments, to sheathe foodstuffs, such as hams.
