It is intended to provide method of elevating the glutamic acid content in a plant and/or its seed; plants and seeds having elevated glutamic acid contents; utilization of a plant and/or seeds having an elevated glutamic acid content in producing a food; and foods containing plants and seeds having elevated glutamic acid contents. Namely, a method of elevating the glutamic acid content in a plant and/or its seeds characterized by inactivating GGT or lowering its activity; and plants and/or seeds in which GGT has been inactivated or its activity has been lowered and which have elevated glutamic acid contents compared with, in particular, the corresponding wild plants grown under the same conditions.
