As techniques of accumulating a human T cell epitope in rice albumen, a method comprising accumulating a T cell epitope-attached peptide (7crp) directly in seeds, and a method comprising inserting 7crp into the variable region of glutelin, which is a major storage protein of rice, and expressing and accumulating the same as a part of the glutelin storage protein are developed. It is strongly expected that the rice capable of producing the T cell epitope-attached peptide thus developed would serve as a practically usable edible vaccine against cedar pollen allergy.
