As techniques of accumulating a human T cell epitope in rice albumen, a methodcomprising accumulating a T cell epitope-attached peptide (7crp) directly inseeds, and a method comprising inserting 7crp into the variable region ofglutelin, which is a major storage protein of rice, and expressing andaccumulating the same as a part of the glutelin storage protein are developed.It is strongly expected that the rice capable of producing the T cell epitope-attached peptide thus developed would serve as a practically usable ediblevaccine against cedar pollen allergy.
