The present invention relates to a process for preparing starch esters by reacting starch with vinyl esters having C ₂ -C ₁₈ ester groups in the presence of an esterification catalyst in a non-aqueous organic solvent. The esterified starch is biodegradable, has a high degree of substitution, high molecular weight and water resistance, and is extremely excellent in mechanical strength and physical properties.
