PURPOSE: A method for preparing mixed fruit and vegetable juice by ultrafiltration is provided, thereby increasing the content of vitamin C in the mixed fruit and vegetable juice to improve preference of the juice and improving the efficiency of membrane separation process. CONSTITUTION: The method for preparing mixed fruit and vegetable juice by ultrafiltration comprises the steps of: washing and selecting fruits and vegetables, slightly boiling them, and independently grinding them to extract each juice of the fruits and vegetables; filtering each juice of fruits and vegetables and adding the antioxidant into the filtered juice to prevent a change of color; centrifuging each juice to collect the supernatant and prefiltering the supernatant; mixing juice of fruits with juice of vegetables in a volume ratio of 25:75; and ultracentrifuging the mixed solution under conditions of the temperature of 15 to 45 deg. C, preferably 18.19 to 28.80 deg. C and the pressure of 100 to 200 kPa, preferably 76.81 to 101.51 kPa.
