PURPOSE: A method of reducing the microbial contamination of germinated unpolished rice using sodium chlorite aqueous solutions is provided. It kills Escherichia coli while reducing a common microorganism without change in germinating rate and nutrients of unpolished rice and simplifies the germination process, thereby avoiding microbial contamination problems of non-heating food. CONSTITUTION: For the germination of unpolished rice, unpolished rice is soaked in 500 to 1,000ppm sodium chlorite aqueous solutions for 10 to 15hr, sprayed with 20 to 100ppm sodium chlorite aqueous solutions in time intervals of 2 hr for 48hr and soaked in 500 to 1,000ppm sodium chlorite aqueous solutions for 2 to 4hr.
