PURPOSE: A powder composition containing crystalline cellulose, chicory fiber, psyllium husk and wheat bran as an active ingredient is provided. It is used for production of functional noodles having lowering effect on cholesterol and preventing effect on obesity. CONSTITUTION: The powder composition for production of potato noodles for prevention of obesity comprises 30 to 70% by weight of potato starch, 1 to 15% by weight of crystalline cellulose, 1 to 10% by weight of chicory fiber, 1 to 10% by weight of psyllium husk, 10 to 40% by weight of starch acetate, 10 to 20% by weight of gluten, 1 to 5% by weight of wheat bran, 0.5 to 2% by weight of an emulsifier and 1 to 2% by weight of table salt based on the dried weight. The potato noodles prepared with the powder composition exhibit higher strength than conventional potato noodles.
