PURPOSE: Provided is a preparation of health tonic kimchi using medicinal herbs according to constitutional medicine. The health tonic kimchi for each constitution category,such as Soeum, Soyang, Taeeum, Taeyang, maintains health and treats diseases. CONSTITUTION: A method of preparation of health tonic kimchi comprises the steps of: preparing main ingredient by cutting and salting Chinese cabbages in 9% (3% in case of dry salt) salt water at 10deg.C for 1-6 hours, followed by washing and dewatering them; preparing a kimchi seasoning by mixing beet strings cut into 5-6cm, salted fishes, flavorings, seasonings and ground red pepper and adding additives suitable for each constitution category; preparing powdery medicinal herb extract; preparing kimchi fillings by mixing the kimchi seasoning with the herbal extracts; stuffing the kimchi fillings into salted Chinese cabbages; and fermenting and maturing the kimchi in a container and packaging it.
