PURPOSE: A method for preparing a health food using the stems and leaves of Gramineae plants to ferment and disintegrate them with anaerobic high-temperature fermentation strains is provided, which produces decomposing ferments. Thereby, one can take the various good ingredients of the stems and leaves of Gramineae plants. CONSTITUTION: A method for preparing a health food using the stems and leaves of Gramineae plants is characterized by adding saccharide solution to the stems and leaves of Gramineae plants, inoculating anaerobic high-temperature fermentation strains, and then fermenting at 20-50deg.C. The used strains are selected out of Trichoderma, Aspergillus, Streptococcus pyogenes, Saccharomyces hansenii, bacillus subtilis, Basillus natto or Saccharomy koreanus.
